Boil the eggs
Step 1
Bring a pot of water to boil with a little bit of white vinegar

Add the eggs to the boiling water and let them cook for 15 mins

Drain the water and peel the eggs
Fry the eggs

Put 3 shallow cuts on every egg making sure not to pierce the yolk

Put a non stick pan on low heat and add a tbsp of oil and the boiled eggs

Fry the eggs for 4 mins

Turn off the heat and sprinkle a pinch of salt and a pinch of turmeric over the eggs. Mix well

For the gravy

Heat oil in a pot

Add cloves, bay leaves, and cinnamon stick. Fry for 30 seconds

Add the copped onions and turn the heat up to high. Fry for a minute.

Add the chopped green chilies and fry for a minute.

Add the curry leaves and fry for a minute.

Cover and cook on a medium flame for 3 minutes

Add ginger garlic paste and fry for a minute

Add turmeric and chopped tomatoes. Mix well.

Cover and cook on a low flame for 5 minutes

Add salt, red chilli powder, cumin powder and coriander powder. Mix well

Add the fried boiled eggs and mix them well for a minute

Add the tamarind juice

Cover and cook on high flame for 2 mins and medium flame for 3 mins.

Add chopped coriander, cover and cook for 2 minutes on medium flame.
