Instructions
Step 1
Fold thin tail over and tie to create uniform thickness throughout.
Step 2
Remove silver film, cover in olive oil, salt and pepper.
Step 3
Prepare fire in half of Weber, keep other half for indirect cooking. Cook all 4 sides over direct heat (hot) for 4 mind each side.
Step 4
Move fillet to other side and cook with lid on for 10 mins (13 mins for 1.9kg).
Step 5
Take out and let stand for 10 mins before carving.
