Mini Pizza Dough Focaccia

Focaccizza? Pizzaccia? Picaccia? I don’t know what to call these, but I do know they’re a delicious way to use up extra pizza dough. They are now the reason I double my pizza dough recipe whenever I make it - I plan for extra dough to make these babies.

Note about pizza dough:
Step 1
You can find both my yeasted and sourdough pizza recipes on my profile and also in the Lace Bakes community on Whisk. Search "Lace Bakes" on communities, and it should show up! You can use your favourite homemade or shop bought pizza dough for this recipe.
To make the mini pizza dough focaccias
Step 2
Preheat oven to 200C or 390F.
Step 3
Place 300g / 10.5 oz of fully proofed pizza dough on a parchment lined baking tray.
Step 4
Dimple it gently to make an even surface for toppings, drizzle with extra virgin olive oil and top with whatever you fancy. Some ideas are listed above in the ingredients.
Step 5
Bake in a 200C /390F oven for 18-22 minutes until they’ve reached your desired level of crispness.
Step 6
These are great used for big sandwiches to share, as a side for soup or salad, or simply enjoyed on their own!
