1.5 LbsBeef Sirloin
or Tenderloin Tips, cut into 1 inch pieces
3 Tbsolive oil
4 Tbsbutter
2 CupsOnion
thinly sliced
1 cupmushrooms sliced
3garlic cloves

3 TbsAll Purpose Flour
1 cupbeef stock
4 Tbsdijon mustard
4 TbsRed Wine

4 TbsGreek Yogurt
Plain, room temperature

Instructions
Step 1
Whisk together mustard, wine, paprika, ½ teaspoon salt and 1 teaspoon pepper. Add the beef to the mustard mixture and marinate for several hours or overnight.
Step 2
Take a sip of wine.
Step 3
Cook egg noodles according to package instructions, drain and set aside.
Step 4
Take a sip of wine.
Step 5
Heat oil in a large frying pan over medium-high heat until shimmering. Add the beef to the frying pan and brown on all sides, about 4 to 6 minutes. Reserve the remaining marinade. Remove the beef from the pan and set aside.
Step 6
Take a sip of wine.
Step 7
Melt butter in the frying pan used for the beef over medium-high heat. Sauté onions and mushrooms for 5 to 7 minutes, stirring frequently, between sips of wine. Add garlic to pan for the last minute of cooking.
Step 8
Take a sip of wine.
Step 9
Sprinkle flour over the onion mixture and stir frequently for 3 minutes.
Step 10
Pour another glass of wine.
Step 11
Stir beef broth into onion mixture and bring to a boil, stirring frequently, between sips of wine. Stir the remaining marinade into the boiling mixture, reduce heat to simmer, cover the pan and simmer for 5 minutes.
Step 12
Take a sip of wine.
Step 13
Return the beef to the pan, cover and simmer for another 5 minutes.
Step 14
Take a sip of wine.
Step 15
Add yogurt to the beef mixture and stir constantly to prevent curdling. (Low fat yogurt tends to curdle more easily).
Step 16
Take a sip of wine.
Step 17
Stir the egg noodles and remaining salt and pepper into the beef mixture and heat through.
Step 18
Enjoy with a glass of wine.
