Instructions
Step 1
Brown sausage, breaking into pieces, in olive oil over medium heat (5 minutes)
Step 2
Add onions and cook for 5-6 minutes.
Step 3
Add garlic, oregano, and red pepper flakes. Cool for another 1 minute
Step 4
Add tomato paste and stir until it darkens.
Step 5
Add diced tomatoes, bay leaves, and chicken stock. Bring to a boil, then reduce heat and simmer for 30 minutes.
Step 6
Add pasta and continue to cook until al dente.
Step 7
Serve over ricotta, adding parmesan and mozzarella on top.
