Instructions

Step 1
Clean, peel and cut up: bok choy, garlic, green onion, and ginger.
Step 2
Add top ramen noodles only to pot with water and cook to directions. (Keep one seasoning packet)
Step 3
Heat pan with one tablespoon sesame oil and two tablespoons olive oil on medium high heat until oil is hot
Step 4
Add chopped boy choy and saute for 1 minute, then add in garlic, onion, and ginger. Stir for another minute until fragrant.
Step 5
Add in 5 (or as many as you want) handfuls of spinach. Stir and let wilt down over 1-2 minutes. Bring temp to low.
Step 6
I’m a separate bowl combine 1/4 soy sauce, one packet of top ramen seasoning, 1 tbsp sriracha sauce, 2 tbsp maple syrup. Whisk together and add to vegetable mix. Stir to combine and let simmer another minute.
Step 7
When vegetables are done, take pan off heat and add top ramen noodles (drained). Stir together until noodles are coated.
Step 8
Fry 1-2 eggs per serving and top off bowl of noodles and vegetables. Enjoy!
