Instructions
Step 1
1 To make the ‘buttermilk’, whisk the milk and apple cider vinegar in a bowl until foamy and set aside for 5–10 minutes.

2 In a large mixing bowl, whisk together the flours, lemon zest, baking powder, bicarbonate of soda, sugar, salt. Keep whisking, slowly pouring in the ‘buttermilk’ mixture and the oil, until the batter is smooth and pourable and the flour is completely incorporated.
Step 3
3 Heat a non-stick frying pan over medium heat (depending on your pan, you may like to add a little oil to prevent the pancakes from sticking). Once the pan is hot, pour in half-ladlefuls
of the batter to make small pancakes. Cook for 1–2 minutes, until the pancakes rise and bubbles appear on the surface. Carefully turn them over and cook on the other side for 1 minute. Keep warm while you cook the remaining batter.
Step 4
4 To serve, stack the pancakes high and serve with fresh seasonal fruit and maple syrup.
