Step 1
1. In a medium bowl, whisk together flour, baking powder and sugar.

2. To another bowl, add ricotta, milk, egg yolk and vanilla extract. Mix well until combined. Add to the dry ingredient bowl and mix to combine.

3. In a seperate bowl, beat the egg white with a whisk until light and fluffy. Fold into the batter.

4. Heat a small frypan over medium heat and add the butter.
Step 5
5. Add a small ladleful of batter to the pan and cook for 2 to 3 minutes on one side or until bubbles begin to form. Flip and cook for a further 2 minutes on the other side, or until golden. Repeat with remaining batter.
Step 6
6. Serve topped with maple syrup, passionfruit pulp and mint leaves.
