Instructions

Step 1
Chop up all vegetables, add olive oil to a pan on medium-high heat.
Step 2
Add the onion and red pepper, seasonings and cook until the onion and pepper are soft.
Step 3
Add diced tomatoes, garlic, spinach and mix well.
Step 4
Make space for the two eggs and around the pan. Add eggs and egg whites around the broader.
Step 5
Cover the pan and cook for 4 minutes.
Step 6
Top with black pepper and parsley.
