I made this when I was super hungry with whatever I found in kitchen. Realized later that it is also called Shashuka, but I used desi species in it.. so named it Desi Shashuka! :)

2green chillies

0.5onion

0.25green bell pepper

3tomatoes

½ cupcoriander

Step 1
If you are not comfortable chopping while cooking at the same time you may keep everything chopped and ready prior to cooking.
Step 2
Finely chop in following sequence if you plan to cook simultaneously:
1. Green Chillies
2. Ginger
3. Garlic (I sliced fresh cloves)
4. Onions
5. Bell peppers
6. Tomatoes
7. Coriander
8. Green Onions
Lets start Cooking everything
Step 3
Fry Green Chillies, Ginger and Garlic in heated cooking oilve oil until garlic starts browning.
Step 4
Add Onion and bell peppers and fry till translucent and soft.
Step 5
Add Tomatotes, Pav bhaji masala, Coriander Powder, Turmeric, Red Chilly powder (Kashmiri - my choice) and salt.
Step 6
Add just a touch of water to allow Tomatoes to soften fast and not loose moisture. (This should be around 3 to 4 tbsp.) Mix everything, close the lid and let veggies cook for around 5 mins (until all tomatoes turns into mushy mix.)
Step 7
Now, make six (or as many eggs you have) pockets in your tomato mix, crack one egg in each pocket.
Step 8
Sprinkle salt & pepper on your eggs.
Step 9
Sprinkle chopped coriander on top of entire dish
Step 10
Set stove on low, close the lid and let eggs cook (poach) in tomato curry for 5 mins.
[Cooking time for eggs depends on your choice of how you want them. I like them little runny to I cook it until I see the egg whites are just done.]
Step 11
Stop cooking and sprinkle chopped green onions to garnish.
Step 12
To serve, pick one egg at a time to plate, add some tomato curry around it if you need more.
Step 13
Garlic Breads goes best with curry. I can eat this as is too.
