Low Carb Blueberry Muffins

I went to university in Canada and one of the things I miss the most during a ketogenic diet are these bran muffins. So this is my low carb variation, quite nice and still fluffy as the original ones. Replacing the sugar for Xylit was a great idea and using protein pancake powder instead of flour to reduce the whole wheat flor and the amount of carbs works also very well.

Instructions

Step 1
In a large bowl put flour, protein pancake mix, baking powder, baking soda and salt. Stir together well.
Step 2
In another bowl stir buttermilk with bran. Let it stand for 5 minutes
Step 3
Add remaining ingredients to the bran mixture in order given and beat well with a spoon.
Step 4
Add blueberries to the flour mixture
Step 5
Add the bran mixture to the flour mixture, stir just to moisture.
Step 6
Fill greased muffin tins 3/4 full. Bake in an oven for 20-22 minutes.
Step 7
Let it stand for 5 minutes. Remove from pan and enjoy!
