Instructions

Step 1
In a large bowl, mix all ingredients well. Shape into 3 one pound rolls and wrap each with aluminum foil with the shinny side in. Put in refrigerator for 24 hours.
Step 2
Prick holds in the aluminum with a knife. Bake on a broiler pan with 2 cups of water in the bottom on the pan.
Step 3
Bake at 325° F. for 1¼ hours. Then remove the aluminum foil and bake for an additional 15 minutes at the same temperature.
Step 4
After the summer sausage has cooled some, wrap them in either aluminum foil or saran wrap and refrigerate.
