Instructions
Step 1
Preheat oven to 200 C

Chop up a whole leek: thick rounds at the bottom, thin slices at the top

Finely chop some brussels sprouts

Rinse leeks and sprouts and spin in a salad spinner

Line one sheet pan with tinfoil and spread out leek circles. Season with olive oil and salt. Cover with tinfoil.

Spread leek tops and brussels sprouts on a second lined sheet pan. Also drizzle with olive oil and season with salt.

Stack greens on top of circles and roast for 20-25 minutes

Thinly slice onions and grate garlic.

Cook onions in olive oil in a pan for 15 minutes

Add the garlic and red pepper flakes and cook for another 1-2 minutes
Step 11
Meanwhile, cook the buckwheat or other grain of your choice
Step 12
Mix together the honey, mustard, tahini, lemon juice, and water.

Add mixture to pan with onions etc. Stir until sauce is thick and glossy
