Instructions

Step 1
1. Whisk eggs and milk together in a bowl

2. Dice red pepper, onion, garlic and tomatoes.
Step 3
3. In a frying pan, add some oil and cook red pepper, onion and garlic until desired softness. Add to egg mixture.
Step 4
4. Add spinach to egg/vegetable mixture and mix together.
Step 5
5. Pour in egg/vegetable mixture to pan and cook on medium with cover. Use spatula to periodically lift edges of omelet to let egg mixture run under cooked portions.
Step 6
6. When omelet top is just about set-up, add mozzarella cheese on top and cover. Cook until cheese is melted.
Step 7
7. Add diced tomatoes to top and serve (makes 4 servings)
