Instructions
Step 1

Cut any excess fat from your steak then slice into long, thin strips. Transfer beef strips into a large bowl, crack an egg into bowl and massage the effect into the beef strips. Add cornflour, salt and pepper to beef strips, then mix until coated.
Step 3
I’d suggest cooking your beef in two batches, half at a time. To shallow fry beef, heat tbsp of cooking oil in a pan. Once the oil is very hot, add beef strips. Cook, flipping regularly for 5 mins, until beef is crispy and deep brown colour. Remove from pan and transfer to a kitchen towel to soak up excess oil. Repeat with the beef.
Step 4
Once beef is fried, heat tbsp of oil in a non-stick pan or wok then add onion and pepper. Fry for 3-4 ins on high heat before adding garlic, ginger and red chilli. Cook for 2 mins before adding soy sauce, sweet chilli, ketchup, rice wine vinegar, tomato puree, honey and a splash of water if it needs loosening. simmer sauce for a few mins before adding fried beef.
Step 5
Serve on basmati rice with sesame seeds and chopped coriander.
