Lime tahini butter mashed sweet potatoes
I’ve been making these lime tahini butter sweet potatoes for a bit and they’re so good.
Prick 3 to 6 sweet potatoes and roast at 400° for about 45 minutes or until your house starts to smell awesome. Next, in a food processor blender or bowl add a softened stick of butter, a quarter cup of lime juice, 2 tablespoons of tahini, and a teaspoon each of soy sauce and toasted sesame oil. Also 1 teaspoon of salt, and plenty of black pepper. Once your potatoes have cooled enough to handle, add your butter and smash together thoroughly. I found using my immersion blender helped a whole lot.
If you like, adding some coconut cream makes it a sweeter treat, you can also turn this into ice cream by adding a quarter cup of heavy cream and half a can of Coco Lopez cream of coconut. It’s also really good with just a little extra lime tahini butter, sesame seeds, and plenty of fresh lime juice. Let me know if you make it and you like it, I love this stuff
