1 ⅓ cupmonk fruit sweetener
½ cupolive oil
½ cupfresh orange juice
1 tspvanilla extract
2 ½ cupswhole grain flour
1 scoopprotein powder
2 tspground cinnamon
2 tspbaking powder
1 tspbaking soda
1 tspsalt
½ tspall spice
1 ½ cupszucchini

Instructions
Step 1
Preheat oven to 350 degrees Fahrenheit.

In a large bowl mix eggs, monk fruit sweetener (granulated), olive oil, orange juice, and 1 tsp vanilla extract.
Step 3
In a separate bowl mix the dry ingredients (flour, 1 scoop protein powder, cinnamon, baking powder, baking soda, salt, and all spice).
Step 4
Slowly combine the mixed dry ingredients into the mixed wet ingredients. After all mixed together mix in the shredded zucchini.
Step 5
Fill paper lined muffin cups two thirds full. Bake until a toothpick inserted in the center comes out clean (20-25 minutes). Cool 15 minutes before removing to a wire rack.
Step 6
For the frosting, in a medium bowl, combine dry ingredients. Mix in butter (I like to melt mine almost completely), milk, and vanilla. Whisk until you reach your desired consistency.
Step 7
Add in green food coloring if you want to make it more St. Paddy's day themed! Enjoy!
