Ingredients

500gyellow potato
3 earscorn
husked and cut crosswise into 6 pieces
½ cupolive oil
4cloves garlic
minced
600gshrimp
medium, peeled and deveined
1lemon
cut into wedges
2 tablespoonsfresh parsley
chopped
cajun seasoning
Instructions
Step 1
Preheat oven to 200˚C.

Step 2
In a large pot of boiling salted water, cook potatoes until just tender and parboiled, about 10-13 minutes. Stir in corn during the last 5 minutes of cooking time and drain well.
Step 3
Make cajun seasoning by mixing all ingredients together.
Step 4
In a small bowl, combine oil, garlic, and 3 tablespoons of cajun seasoning.
Step 5
Place potatoes, corn and shrimp in a single layer onto a greased baking sheet. Gently toss with the oil mixture.
Step 6
Bake for 12-15 minutes, or until the shrimp are opaque and corn is tender.
Step 7
Serve immediately with lemon wedges, and sprinkle with parsley.
