Ingredients

25gfresh root ginger
peeled and finely chopped

2garlic cloves
finely chopped

3 Tbspreduced-salt soy sauce

1red chilli
finely chopped

500gpork loin steaks
visible fat removed, sliced

low-calorie cooking spray

1red onion
thinly sliced

2carrots
peeled and sliced into thin strips

1red pepper
deseeded and thinly sliced

1cabbage
small, shredded

30gfresh coriander
leaves roughly chopped and stems finely chopped
Instructions
Step 1
1 Put the ginger, garlic, soy sauce, chilli and pork into a glass or stainless-steel bowl and toss to combine. Cover with cling film and leave to marinate in the fridge for 30 minutes, or overnight if you can.
Step 2
2 Spray a large, non-stick wok or frying pan with low-calorie cooking spray and place over a medium-high heat. Once hot, add the onion, carrots and pepper, and stir-fry for 3-4 minutes. Add the pork and marinade, and stir-fry for a further 8-10 minutes, or until the pork is cooked through. Transfer to a bowl and set aside.
Step 3
3 Add the cabbage to the pan with 100ml water and increase the heat to high. Stir-fry for 2 minutes, or until just tender, then return the pork mixture to the pan and cook until everything is piping hot. Stir through most of the coriander, then scatter the rest over the top to serve.
