Step 1
Remove the steaks from the fridge to bring up to room temperature. Halve the pepper and discard the core and seeds. Slice into thin strips. Halve, peel and thinly slice the onion. Peel and grate the garlic (or use a garlic press). Trim the bok choy, then thinly slice widthways. Peel and grate the ginger. Roughly chop the cashew nuts.
Step 2
Heat a medium frying pan on medium-high heat with a drizzle of oil. Once hot, add the onion and cook until softened, 3-4 mins. Add the pepper, savoy cabbage, bok choy and garlic, and cook until all have softened, a further 5-6 mins.
Step 3
Meanwhile, heat a medium frying pan on medium-high heat with a drizzle of oil. Season the steaks on both sides with salt and pepper. Once hot, brown the steaks for 1 min on each side. Lower the heat to medium, add the ginger and sesame oil and cook for another 30 secs on each side for medium-rare, or 1-2 mins on each side for well done. IMPORTANT: Wash your hands and equipment after handling raw meat. The steak is safe to eat when the outside is browned.
Step 4
Remove the steak from the pan and cover with foil or another plate. Leave to rest while you finish cooking the veg. Add the tamari and cashew nuts to the veg and cook for a further 1-2 mins, stirring frequently.
Step 5
Meanwhile, trim the spring onion, then slice thinly on an angle. Slice the steak widthways on a chopping board into 1cm slices.
Step 6
Divide the veggies between your bowls. Place the sliced steak on top of the veggies. Garnish with the sesame seeds and spring onion.
