Instructions
Step 1
Insert the Butterfly Whisk attachment into the Thermomix mixing bowl.
Step 2
Add the 600g peeled and cubed sweet potatoes, 30g extra virgin olive oil, 100g plant-based milk, 1 tsp kosher salt, and 1/8 tsp ground black pepper to the mixing bowl.
Step 3
Secure the Thermomix lid and measuring cup. Cook for 18 minutes / 100°C / Speed 1.
Step 4
Check for tenderness: Carefully open the lid and test if the sweet potato cubes are very soft by piercing easily with a fork or the tip of a knife.
Step 5
Continue Cooking (if needed): If the sweet potatoes are not yet fully tender, secure the lid and cook for an additional 2-5 minutes / 100°C / Speed 1, checking again until tender.
Step 6
Remove the Butterfly Whisk attachment carefully (it may be hot).
Step 7
Add the 15g washed fresh cilantro to the sweet potato mixture in the bowl.
Step 8
Secure the lid and measuring cup. Blend for 30 seconds / Speed 4, or until the puree reaches a smooth and creamy consistency. You may need to gradually increase speed or blend slightly longer depending on your desired texture.
Step 9
Taste and Adjust Seasoning: Carefully taste the puree and add more salt or pepper if desired. Blend briefly (e.g., 5 seconds / Speed 3) to incorporate any additions.
Step 10
Serve the puree immediately while hot.
