Turkey Pho
Best part of having Thanksgiving leftovers, is making turkey pho! This has been a tradition in my house for over 20 years and I actually look forward to this every year. It’s a great way to use up all of your leftover turkey and since the turkey has already been marinated, it adds an extra flavor to the soup.

Step 1
Using a large soup pot, add water and the turkey bones. Char the onion and ginger in an air fryer or on the stove and add to the pot. Add star anise, pho seasoning (according to the measurements), rock sugar, and fish sauce. Boil the turkey bones for about 45 minutes to release all the flavors. Cook pho noodles according to package instructions. Add shredded turkey then broth and seasoning/condiments.
