Step 1
Preheat oven to 450°F.

Boil the potatoes (bring to a boil, then simmer 15 minutes).

Top salmon with Dijon mustard and halved garlic cloves. Bake on a foil lined, oiled tray for 15 minutes.

Smash salmon to separate into pieces. Combine eggs, spinach, salmon, dill, and 2 tsp salt-free Sunny Paris spice mix from The Spice House (shallots, peppercorns, dill, scallions, basil, terragon, chervil, bay) in a bowl.
Step 5
Cook omelette. Top with feta cheese. Top potatoes with butter and parsley. Cut carrot sticks. Serve.
