Instructions
Step 1
Begin with taking the butter and melting it in a medium frying pan over medium-high heat.
Step 2
Then add the riced cauliflower and toss it in the butter. Sautee until the rice is tender. (You can also use the frozen cauliflower rice and steam it in the bag and then add it to the pan to cut cooking time)
Step 3
Next push the rice to one side of the pan and crack the egg in the pan. Scramble it with a spatula and allow it to cook.
Mix it in with the riced cauliflower now.
Step 4
Now add in the remaining ingredients and toss together
Step 5
Cover the pan and allow to cook on low for 5 mins.
