Step 1
Set a large pan over medium heat. Add the coconut oil, sweet potatoes, and onions. Cover and simmer themixture for 7 to 10 minutes, stirring frequently. Add the salt and pepper. Cook the mixture uncovered for an additional 2 to 3 minutes, stirring frequently, or until the sweet potatoes are soft and slightly browned.
