I use this basic bulk recipe - then freeze it and use it to make shepherd's pie; bolognaise; moussaka; lasagne; curry mince; pizza etc.

Ingredients

1kgbeef mince

1kgpork mince

500gbacon
rindless diced

8onions
medium, chopped

8 clovesgarlic
crushed

4 tablespoonsflour

4 cupscarrot
grated

1 cupcelery
very finely sliced

1tins tomato paste
small

3tins chopped tomatoes

2 cupsred wine
optional

2 cupschicken stock

2 teaspoonssugar

2 tablespoonsbasil
fresh chopped

3 teaspoonssalt

1 teaspoonpepper

1 tablespoonitalian herbs
Instructions
Step 1
Use 1 very large saucepan (pot) or 2 smaller divide ingredients in half
Step 2
Fry bacon in oil till crisp. Add onions and garlic and saute for 10-15 minutes till browned.
Step 3
Turn stove on high and add meat. Stir fry (to crumble meat use a fork to stir)
Step 4
Add flour, carrot, celery - when meat is well crumbled (do not let it dry out - just crumbled|) Mix well.
Step 5
Add all rest of ingredients.
Step 6
Turn heat down - simmer gently for 1½-2 hours. You will then have a lovely mince & tomato mixture to make a lot of dishes.
Step 7
Let cool down completely. Pack into 500g portions for freezing.
