Kaukab says there is nothing like her Lahori Chicken Karahi - it's a recipe she learned from her mother, one that has been passed down generations. It's a rich, and absolutely delicious traditional Pakistani chicken curry.

Ingredients
4 servings
750gchicken
whole chicken or boneless thighs
1 cupoil
2 Tbspghee
or butter
1 Tbspfresh ginger
finely chopped
1 Tbspfresh garlic
finely chopped
5fresh tomatoes
4 Tbspyogurt
1onion
medium sized
3fresh green chillies
not the very thin
1 tspchilli powder
1 ½ tspsalt
1 tspgaram masala
1 tspcoriander seeds
coarsely ground, optional
1 tspcumin seeds
coarsely
0.5 bunchfresh coriander
2 "fresh ginger
for garnish
Instructions
Step 1
Heat oil, add garlic and ginger. Fry gently for a few minutes without browning.
Step 2
Add chicken, fry until golden.
Step 3
Cut tomatoes in half, place on top of chicken, cut side facing down. Add 2/3 tbsp water and cover on medium heat.
Step 4
Check about 6/7 minutes later to see if skin on the tomatoes has softened. If so, remove with tongs or fork. Break the tomatoes down with the back of a wooden spoon.
Step 5
Add sliced onion, half the fresh coriander and half green chillies cut into strips. Stir gently. Cover to cook for 5 mins on medium heat.
Step 6
Add chilli powder, coriander seeds, cumin seeds, garam masala, and salt. Stir well.
Step 7
Add yogurt, continue stirring, then cover for a final few minutes until the oil has been released, and tomatoes and onions have softened and become a little saucy
Step 8
Now add ghee or butter and stir in well
Step 9
Karahi is ready to be served! Garnish with ginger julienne, strips of green chilli, and coriander
