French bread pizza reminds me of my high school days when I would come home from school ravenous and turn French bread into an awesome after-school meal. I still make such pizzas today, although now I sneak in some whole grains and top them with tons of veggies. It’s perfect because everyone can customize their toppings to their taste. I’ve always liked the classic combination of pepperoni, mushrooms, bell peppers, and onions, but you can use any vegetables or leftovers you have, including broccoli, sliced turkey, meatballs, spinach—the possibilities are endless!
Bake until the cheese is melted and bubbling, and the bread is crisp, about 10 minutes.

Preheat the oven to 425°F. Split the bread horizontally lengthwise, then cut each half crosswise into 2 pieces to give you 4 pieces total. Scoop out the center of the bread, keeping only the crust (each should weigh about 2 ounces). Place the bread, cut side up, on a baking sheet. Spread each piece with ¼ cup marinara sauce. Divide the mushrooms, onion rings, pepper slices, mozzarella, and Parmesan among the pieces, then top with pepperoni.
