Mango Rainbow Sticky Rice

This is fun to make and a perfect Easter dessert. It’s so colorful and more importantly, delicious!

Instructions

Step 1
Separate rice into small bowls and give it a quick rinse. Add water to cover the rice in each bowl and add food coloring of your choice. Let this soak for 1 hour to soften the rice.
Step 2
Drain the rice and steam in a basket. If you don’t have one, use a rice cooker and for 2 cups of rice, use 2.5 cups of water.
Step 3
In a small pot, add the coconut milk, salt and palm sugar. Simmer until the sugar is dissolved. Pour out the coconut milk to a bowl and reserve 1/2 a cup to make a coconut sauce in the pot.
Step 4
Mix water and cornstarch together and stir to dissolve. Add the slurry mixture to the coconut milk. Let this simmer and continue to stir until the sauce is thickened.
Step 5
Slice or cube mangoes. Serve with the coconut rice and top with the sauce and toasted sesame seeds.
