Instructions
Step 1
In a non-stick frying pan, add the red curry paste and fry over a medium heat for 20 seconds
Step 2
Add the pumpkin and toss to combine.
Step 3
Add the coconut milk, swirl½ cup (125ml) water in the can and add. Stir well.
Step 4
Bring to a gentle boil, reduce heat, simmering for 10 minutes, then add the lentils.
Step 5
Simmer for at least 20 minutes or until tender.
