Skinny Fettucine Alfredo

This is a delicious, somewhat healthier, alfredo recipe given to me by one of my chef instructors at culinary school.

Instructions

Step 1
In a pot of boiling, salted, water cook the pasta according to package directions. Drain and transfer to a large serving bowl.
Step 2
Meanwhile, in a medium saucepan, heat the olive over over medium-low heat. Add the garlic and cook, stirring frequently, until the garlic is golden, about 1-2 minutes.
Step 3
Whisk in the flour until smooth, about 2 minutes. Whisk in the cream cheese, then gradually add in chicken broth, milk, and pepper. Bring to a low boil, stirring constantly.
Step 4
Lower the heat and simmer, stirring gently, until the mixture thickens, about 3 minutes.
Step 5
Pour the sauce over pasta and toss. Stir in 3/4 cup parmesan. Top with parsley leaves and more parmesan.
