⏱A delicious combination of flavours that takes no time to make.
👨🏻🍳This recipe is super easy and can be served hot or cold!
Serves 2 as a main or 4 as a side dish
200g soba noodles
1 courgette, julienne
1 cucumber, julienne
1 tbsp fresh ginger, grated or minced
2 tbsp maple syrup
2 tbsp rice wine vinegar
1 tbsp sesame oil
2 tbsp soy sauce
1-2 tsp chilli flakes
Fresh spring onions, sliced
Fresh coriander, chopped
Lime juice
💁🏻♂️Pro tip for less waste: as always wash and clean produce before preparing, but keep the skins to create less food waste.
