Spicy Beef Wrap to Go

Perfect for busy students, or anyone who wants to eat healthy on the run. The ground beef has great taste, and the starch in the sweet potatoes gives this wrap depth. You get the richness that the taste buds really go for.

Instructions

Spicy Beef

Step 1
In a 10” saucepan over medium high heat, add oil and let heat for 10 seconds. Sauté onion for 30 seconds.
Step 2
Season with salt and pepper. Add the ground beef to the onions, and stir until cooked.
Step 3
Add garlic, chilli flakes, and sweet potato; cover and cook about 15 minutes, stirring every 3-4 minutes. (Chef’s tip: add more chilli flakes if you wish to have more heat.)
Step 4
Add the mushrooms and carrots to the mixture, cooking and stirring another 5 minutes. Stir in the green pepper, then check the seasoning, adding more salt and pepper if needed.

Wrap Sauce

Step 5
Place all the sauce ingredients into a food processor or blender and pulse until incorporated. Check the seasoning and adjust.

Assembly

Step 6
Place the 4 wraps on the table, spaced out. Divide the beef mixture evenly among the wraps, placing it in a line down the wrap.
Step 7
Divide the sauce across the top of the meat mixture, evenly, then place the lettuce on top of the sauce.
Step 8
Roll wraps tightly, tucking in the ends. Roll each wrap in parchment paper, then plastic wrap. Your meal is ready to go!
