Instructions
Step 1
Soak sea grapes in cold water and ice for 20 minutes until they are fully expanded; Soak Chinese dates and goji berries in water as well for 20 minutes or so.
Step 2
Slice ginger and chop scallion, further slice medium firm tofu into evenly sized square pieces, set aside.
Step 3
Heat up cooking oil in a pan, put clean trout fish in the heated pan to fry on medium heat. Add in cooking wine. Flip when the bottom side is golden brown, continue to cook for a couple of minutes on the other side until both sides turn golden brown Smash the whole fish meat into small pieces with fish bones kept in, then add in boiling water- approximately 1200 ml. Throw in sliced ginger, and bring broth to boil for 5-10 minutes.
Step 4
Drain fish broth from the pot, leaving the broth creamy, white and free of fish meat and bones. Add soaked goji berries and Chinese dates in the broth, simmer for a couple of minutes.
Step 5
Put in sliced tofu and fully expanded sea grapes. Gently stir to cook. Season the broth with salt to your liking. Garnish with scallion, serve warm.
