Instructions

Step 1
Knead the ingredients for the dough until smooth and soft. Put the dough in a container and refrigerate for one hour.
Step 2
Pour hot water over cashews and soak for at least 15 minutes. For the filling, puree all ingredients in a blender or food processor until smooth.

Step 3
Roll out the dough thinly and cut into rectangles. Put filling on one side, brush with water and fold shut. Seal the dough with a fork.
Step 4
Boil the ravioli in well salted water for about 3-4 minutes.
Step 5
Toss ravioli in a little olive oil with some sage or enjoy with tomato sauce.
