Step 1

1. Add lamb to yogurt marinade and refrigerate for 3 hours.

2. Cook shallots in boiling water for 10 mins. Drain and halve.

3. Cut bacon rashers in half. Roll up each one like a Swiss roll

4. Thread lamb on to 4 skewers alternately with halved onions, bacon rolls, tomatoes and mushrooms.
Step 5
5. Stand in grill pan. Brush well with melted butter.
Step 6
6. Cook under pre-heated hot grill for 8 mins.
Step 7
7. Turn and brush with more butter.
Step 8
8. Grill for a further 8 mins or until cooked.
Step 9
9. Serve on bed of rice.
Step 10
10. Garnish with coriander.
