Instructions
Step 1
Cook pasta as per instructions on stove top.
Step 2
Prepare ingredient in seperate bowls. Halve and slice chorizo. Remove the seeds from olives and slices. Roughly chop basil. Finely chop garlic clove.
Step 3
In a large pan, brown the chorizo on high heat. Don’t add oil as the chorizo is fatty enough. When browned, add garlic and brown garlic.
Step 4
Add olives and half of the basil, toss thoroughly in the pan on high heat.
Add tomato’s, tomato paste, passata and sugar. Bring to boil and mix together.
Step 5
Add 1/4 cup of pasta water to the pasta sauce and bring to the boil. Reduce to thicken the sauce for 5 minutes. Once pasta is cooked, drain the pasta and add to the pan. Add the rest of the basil and toss all together. Serve.
