Fiesta Dinner Salad

This is a great salad for dinner. Filled with beans and corn and fresh flavour, it comes together in no time at all. Turn it into a hand held dinner for little ones if they like to eat their veggies better that way :) Serve over tortilla chips and add a little salsa if you like - for more of a taco salad feel.
The ranch style dressing can be kept in the fridge for up to 5 days. You can easily double or triple the recipe to suit your needs

Ingredients
4 servings
1 headiceberg lettuce
crisp, washed and torn into bite-sized pieces, add in a handful or 2 of mixed greens or spinach
1can black beans
drained and rinsed
2 cupscorn
2 cupscherry tomatoes
cut in half
0.5red onion
thinly sliced
1 ½ cupscheddar
or a jalapeno/spicy cheddar, shredded or cut into 1/4” cubes
For the Dressing
Instructions
Step 1
Mix all dressing ingredients together. Taste for seasoning.
Step 2
For a quick dinner toss all the ingredients in a large bowl with enough dressing to lightly dress.
Step 3
For a composed salad to serve at the table, Toss lettuce with dressing and lay out a base of greens on a large platter. Arrange toppings a pleasing pattern.
