1 ½ cupsrice
cooked white jasmine
½ cupred onion
minced
1 tspgarlic
minced
salt
2 cupsspinach
chopped
12 spearsasparagus
chopped
2eggs

2egg whites
liquid egg whites
¼ tsporegano dried
¼ tspblack pepper
2 Tbspparmesan cheese
3Italian chicken sausages
chopped
½ cuppizza sauce
½ cupmozzarella cheese
shredded, low-fat
Fresh basil
chopped for garnish
Instructions
Step 1
Preheat oven to 400 degrees.
Step 2
Cook the rice according to the directions on the package.
Step 3
Heat a skillet to medium heat and spray with cooking spray. Add the red onion, garlic and sea salt; cook and stir for 2 minutes. Add the spinach. Cook until the spinach is wilted. Add the asparagus and cook until crisp-tender. Transfer to a plate to cool.
Step 4
In a medium sized bowl combine the eggs, egg whites, oregano and black pepper. Stir in cooked rice, Parmesan cheese and spinach mixture. Press onto a large baking sheet lined with parchment paper and form one thin circle. Bake for 10 minutes then broil an additional 1-2 minutes.
Step 5
Add the sausage, mushrooms and peppers to a frying pan and sauté for 10 minutes. Turn the oven down to 350 degrees. Top the pizza crust with pizza sauce, mozzarella cheese, sausage, mushrooms and peppers. Return to the oven for about 5-10 minutes or until cheese is melted. Top with fresh basil. Divide the pizza into four equal servings.
