Instructions
Step 1
Cook the sausage, breaking it into smaller pieces. Set aside.
Step 2
In the same pan, sauté onion. Add rice and warm it up until translucent (1 min). Add 1 cup of water, broth, spices, tomato. Keep cooking on medium heat and stirring, adding water as needed until the liquid is absorbed and the rice is cooked.
Step 3
Meanwhile, make zucchini ribbons. In a bowl, mix it with lemon zest, lemon juice, touch of olive oil, salt and pepper.
Step 4
When the rice is ready, mix in the sausage and Parmesan cheese. Serve with zucchini ribbons on the side.
