Asparagus with Pasta

Penne Pasta mixed with tender asparagus, fresh tomatoes, chives. It's so delicious and easy to make that you will find yourself cooking multiple times.

Instructions

Step 1
Bring a large pot of salted water to a boil and add penne to pot. Cook for 9-11 mins and then drain pasta
Step 2
Cut asparagus in 1 inch long pieces and discard woody bottom ends from asparagus
Step 3
Dice tomato. Mince chives.
Step 4
Heat some oil in a pan and mix cut asparagus, diced tomatoes and mince chives and mix to cook for 2-4 few minutes.
Step 5
Then add panko, almonds, salt and pepper, squeeze of lemon juice and a pinch of chili flakes and cook for another 1-2 minutes.
Step 6
Mix drained pasta and stir to mix together well with garlic herb butter, half the Parmesan, salt and pepper
Step 7
Transfer to Bowl and sprinkle with the rest of the parmesan cheese.
