Instructions
Step 1
Combine lima beans & 2 quarts of water over high heat. Cover, boil, then turn off heat. Let beans sit for an hour or two.
Step 2
Drain beans.
Step 3
Stock pot add olive oil over medium high heat. Add onion, garlic, carrots, and celery. Saute for 10 minutes
Step 4
Add lima beans and barely. Saute for 2 more minutes
Step 5
Add stock and bay leaves
Step 6
Bring to boil. Reduce heat to medium and simmer for 1-1 1/4 hours or until lima beans are thoroughly cooked.
Step 7
Add more stock if soup looks dry
Step 8
Add parsley, worcestershire sauce, vinegar, salt, and pepper. Remove bay leaves before serving
