Ingredients
4 servings

1 tablespoonextra-virgin olive oil

1 cupchopped onion

1 cupbell pepper
chopped, any color

2garlic cloves

1 x 15 ouncecan lentils
drained and rinsed

2garlic cloves
minced

1 x 14.5 ouncecan low-sodium diced tomatoes
or no-salt-added, undrained

1 teaspoonground cumin

1 teaspoondried thyme

¼ teaspoonsea salt

4whole wheat pita breads
split

1 ½ cupsseedless cucumber
chopped

1 cupromaine lettuce
Instructions
Step 1
In a medium saucepan over medium-high heat, heat the oil. Add the onion and bell pepper and cook for 4 minutes, stirring frequently. Add the garlic and cook for 1 minute, stirring frequently. Add the lentils, tomatoes, (with their liquid), cumin, thyme, and salt. Turn the heat to medium and cook, stirring occasionally, for 10 minutes, or until most of the liquid has evaporated.
Step 2
Stuff the lentil mixture inside each pita. Lay the cucumbers and lettuce on top of the lentil mixture and serve.

Using dry brown lentils is also an option for this recipe. After cooking the garlic, add 3/4 cup dried lentils and 2 1/4 cups water, cover, and cook on medium heat for 15 minutes. Add the rest of the ingredients in step 1, cover again, and cook on medium heat for another 15 minutes, or until most of the liquid has evaporated.
