Instructions

Step 1
Start by washing the mung beans and allowing them to soak for 4 hours (or even overnight). Then, cook them for 20 - 30 minutes (or until tender).
Step 2
Blend onions and red beets in a food processor (raw red beets are less water-y, but you can use boiled ones too and optionally add some more mung beans to maintain structure). Add the spices to this blend.
Step 3
Let the mung beans cool down a little bit and then add them, in portions, to the food processor. Blend until you achieve a smooth but thick mixture.
Step 4
Roll this mixture into tiny balls while preheating a pan. Once the pan is hot, add oil and fry the balls for a few minutes on all sides. Enjoy the balls with a good (homemade) bbq sauce, or in a delicious salad!
