Shepherd's Pie w/ Sweet Potato Topping

This dish freezes well, so go ahead and double the recipe and freeze half for a future meal. Substitute regular potatoes for the sweet potatoes if you wish.

Ingredients

Sweet Potato Topping
2sweet potatoes
medium, peeled and cubed, cubed
1 Tbspextra virgin olive oil
coconut oil, ghee, or avocado oil
½ tspchili powder
¼ tspsea salt
Filling
1 Tbsparrowroot
cornstarch, or potato starch
2 Tbspwater
1 lbground lamb
grass-fed, or beef or bison for cottage pie
2carrots
medium, peeled and chopped
0.5green pepper
chopped
1onion
small, chopped
2cloves garlic
chopped
½ tspdried rosemary
¾ tspchili powder
¼ tspsea salt
or to taste
¼ tspblack pepper
3 oztomato paste
Instructions
Step 1
Preheat oven to 375℉.
Step 2
For the topping: Steam or bake (at 375℉.) the sweet potatoes until fork tender. Then add all of the topping ingredients to a food processor or blender, or place in a bowl and use an immersion blender. Process until smooth then set aside.
Step 3
For the filling: Combine the arrowroot with water and set aside.
Step 4
In a skillet on medium heat brown ground meat. Add cooking fat if necessary.
Step 5
Once meat is partially browned, add chopped carrots, onions, peppers, and minced garlic.
Step 6
Cook on medium heat until carrots are soft, about 10 minutes.
Step 7
Once the carrots are soft, stir in tomato paste, arrowroot and water, rosemary, chili powder, salt, and pepper.
Step 8
Final step: transfer the meat filling to a casserole dish (9 x 9 inch dish will work) and top the meat filling with the Sweet Potato Mash.
Step 9
Bake for 15 minutes. Remove from the oven and serve.
