Instructions
Step 1
Clean chicken with lime and vinegar, and then dry with a paper towel
Step 2
Add in your Walkers Wood Jamaican Jerk Marinade/Seasoning (black pepper, paprika, garlic powder, seasoning salt, onion powder, brown sugar, honey, and green seasoning). You may find the green seasoning recipe on my whisk page if you decide to add this seasoning, it is optional
Step 3
When all the ingredients are combined, put your chicken and bell peppers on a baking sheet and broil for about 4 minutes on each side (timing may vary) until the chicken is nicely colored
Step 4
Put your chicken in a pot, and add water to the bowl you used to season the chicken. Stir in one tablespoon of jerk seasoning with your water. After covering the chicken with water, add your thyme and parsley
Step 5
For about 20 minutes, cook your chicken with the lid on. After that, remove the lid and let the majority of the water boil out; this took me about 30 minutes. Season your pot if it needs any additional seasoning; I ended up adding one tsp each of seasoning salt, garlic powder, and onion powder
Step 6
Add additional parsley as a garnish and enjoy!
