Instructions
Step 1
Heat oil in a stock pot. Saute onion for 3 min.
Step 2
Add garlic and tomatoes and cook for 3 min.
Step 3
Add chicken broth, oregano, basil, drained black beans, vinegar, and black pepper to taste. Reduce the heat to low and simmer for 5 min.
Step 4
Add the tortellini and cook for 8 min.
Step 5
Top with shredded parmesan
