Instructions

Step 1
Start by chopping the celery, onion and carrot. To a pan on medium heat, add the oil and the chopped vegetables. Cook for a couple of minutes before adding the whole garlic clove and a few tablespoons of stock
Step 2
After 5 minutes, add the (washed) lentils and the tomato passata, followed by the herbs and chilli flakes (and about 1.5 cups of stock). Cover and cook for 40/45 minutes on low heat, until the lentils are cooked through. Remove the garlic once this is done
Step 3
Add the pasta to the pot and cover with the stock. Cook for about 15 minutes stirring often and adding more stock as necessary. Serve with a bit of Parmesan and enjoy!
