Instructions
Step 1
First- pull out your butter and cream cheese the night before so it’s completely soft.
Step 2
To start the dough warm your milk to 115°f and add your yeast. Once the yeast softens about 1 minute give it a gentle stir. Let sit for 10 minutes until a little frothy and bubbly.

While your yeast proves, whisk eggs, melted (but cool) butter, and sugar.

Step 4
Add your egg mixture to your yeast mixture. Mix flour and salt together. Then add your all purpose flour one cup at a time folding it together with a rubber spatula.

Once all the flour is incorporated let it sit for 10 minutes so the flour can hydrate.

If using a mixer mix on medium speed (speed 4) for 5 minutes. Or by hand for 10 minutes.

Cover up your dough with plastic wrap and prove for 45 minutes or until it’s nearly doubled in size.

Mix together soft butter, light brown sugar, cinnamon, and cardamom. Reserve

Knock out any gasses and on a lightly floured work surface roll into a 12x15 rectangle. Spread your filling evenly and roll into a tight log

Cut your log into portions around two inches high.

Place into a buttered baking dish leaving a little bit of room for expansion

If you want to bake these fresh in the morning- cover with plastic and place in the coldest part of your fridge now. This is your pause button. In the morning- remove and once they come to room temperature wait until they double in size it should take around 40 minutes then follow the instructions below

Prove again for 20 minutes

Before placing in the oven pour 1/2 c heavy cream which has been slightly warmed up into the baking dish. Try to make sure it’s distributed evenly

Bake at 350°f / 176°c for 20 minutes checking at around 15 minutes. Once out of the oven let cool slightly before adding icing

For the icing add 1/2 c bourbon to a pot and reduce by half, you can check how much it’s reduced by pouring into a measuring cup- it should be 1/4 cup. Once it’s cooled mix together with VERY soft cream cheese and maple syrup
