Instructions

Step 1
1. Preheat the oven to 200oc and line a tin with baking parchment
Step 2
2. Melt the butter and syrup together in a large saucepan over a low heat, stirring regularly with a wooden spoon.

3. Take off the heat and stir in the seeds, cranberries, raisins, apricots and oats, and stir in the pumpkin purée or egg
Step 4
4. Pour into the prepared tin and press well until flattened (it’s important to press the oats well so they stay firm enough to cut when baked)
Step 5
5. Bake for 18-20 minutes, or until golden and slightly browned around the edges
Step 6
6. Leave to cool and cut with a sharp knife
Step 7
7. Store in an airtight container for up to a week
